Schmuns

This is your go to if you want to eat something delicious, simply add some peri-peri or spice you like and it adds a delicious savory note.

Ingredients

  1. 2 eggs separated
  2. 70 g cream cheese
  3. Pinch of salt
  4. 1 tsp psyllium seed husks
  5. ½ teaspoon baking powder
  6. 1 tsp butter

Instructions

  1. Preheat your oven to 300F, 150C.
  2. Do this well in advance because you do not want the egg whites to fail.
  3. Take a backing tray and smear with butter
  4. Whip the egg whites until stiff. If you turn the bowl upside down it should stick.
  5. In a separate bowl, mix the egg yolks, psyllium husks, salt, baking powder and the cream cheese.
  6. Gently fold the egg whites into the egg yolk mixture. You want to keep the air in the egg whites.
  7. Put the mixture on the tray, each Schmun should be as big or small as you need them to be.
  8. Bake for 25 – 50 minutes, so they are nice and golden brown.
